For the Crust:
- 6 cups mixed salad greens
- 1 pint fresh blueberries, divided
- 1/2 cup crumbled goat cheese
- 1/2 cup pecans, toasted
- 1/4 cup red onion, thinly sliced
- 1/4 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 1 tablespoon honey
- 1 small shallot, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
1. Prepare the Crust:
- For the dressing: In a blender, combine 1/2 cup of the blueberries, balsamic vinegar, olive oil, honey, shallot, salt, and pepper. Blend until completely smooth.
- In a large salad bowl, combine the mixed greens, remaining blueberries, crumbled goat cheese, toasted pecans, and red onion.
- Drizzle the desired amount of dressing over the salad and toss gently to combine. Serve immediately.
