Description

A moist and flavorful cake made with fresh carrots, typically topped with chocolate frosting, popular in Brazilian cuisine.


Ingredients

  • 3 medium carrots, peeled and chopped
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • For the frosting: 1 can sweetened condensed milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons cocoa powder

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease a 9-inch round cake pan.
  2. In a blender, combine the carrots, eggs, oil, and sugar. Blend until smooth.
  3. In a large bowl, sift together the flour and baking powder.
  4. Pour the blended mixture into the bowl with the dry ingredients and mix until well combined.
  5. Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean.
  6. For the frosting: In a saucepan, combine the condensed milk, butter, and cocoa powder. Cook over medium heat, stirring constantly, until thickened.
  7. Once the cake is cool, spread the frosting evenly over the top.

Notes

Ensure carrots are finely chopped for a smooth batter; this cake pairs well with coffee.
