Elegant, flaky puff pastry swirls filled with creamy brie, sweet blackberries, and a hint of aromatic rosemary, all drizzled with honey for a perfect sweet and savory appetizer.

For the Crust:

  • 1 sheet frozen puff pastry, thawed
  • 4 oz brie cheese, rind removed and cubed
  • 1/2 cup blackberries, halved
  • 1 tbsp fresh rosemary, finely chopped
  • 2 tbsp honey, plus more for drizzling
  • 1 egg, beaten (for egg wash)
  • All-purpose flour, for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll the puff pastry into a 10×12 inch rectangle. Spread the cubed brie and halved blackberries evenly over the pastry. Sprinkle with chopped rosemary and drizzle with 2 tablespoons of honey.
  3. Starting from the long side, tightly roll the pastry into a log. Using a sharp knife, slice the log into 1-inch thick rounds. Place the swirls on the prepared baking sheet, brush the tops with the egg wash.
  4. Bake for 20-25 minutes, or until the pastry is puffed and golden brown. Remove from the oven and let cool for 5 minutes. Drizzle with additional honey before serving.
