Description

A creamy and cozy lasagna featuring butternut squash and spinach for a delicious meal.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 cups fresh spinach
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups marinara sauce
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper, then roast for 25 minutes until tender.
  3. In a skillet, sautΓ© the chopped onion and garlic until softened, then add the fresh spinach and cook until wilted.
  4. In a baking dish, spread a layer of marinara sauce, followed by lasagna noodles, ricotta cheese, roasted squash, spinach mixture, and mozzarella cheese. Repeat layers.
  5. Top with remaining mozzarella and bake at 375Β°F (190Β°C) for 35-40 minutes until bubbly and golden.
  6. Let cool for 10 minutes before serving.
