- 1 medium butternut squash, peeled and cubed
- 2 cups fresh spinach
- 9 lasagna noodles
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups marinara sauce
- Salt and pepper to taste
- Olive oil for roasting
Instructions
- Preheat the oven to 400Β°F (200Β°C).
- Toss the cubed butternut squash with olive oil, salt, and pepper, then roast for 25 minutes until tender.
- In a skillet, sautΓ© the chopped onion and garlic until softened, then add the fresh spinach and cook until wilted.
- In a baking dish, spread a layer of marinara sauce, followed by lasagna noodles, ricotta cheese, roasted squash, spinach mixture, and mozzarella cheese. Repeat layers.
- Top with remaining mozzarella and bake at 375Β°F (190Β°C) for 35-40 minutes until bubbly and golden.
- Let cool for 10 minutes before serving.
