Soft snickerdoodle cookies filled with gooey caramel.
Ingredients

- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 2 tsp cream of tartar
- 1/2 tsp salt
- 1 cup unsalted butter
- 1 1/4 cups granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup granulated sugar for rolling
- 1 tbsp ground cinnamon for rolling
- 24 caramel candies
Instructions
- Preheat oven to 375Β°F.
- In a medium bowl, whisk together flour, baking soda, cream of tartar, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- Gradually add dry ingredients to wet ingredients.
- Wrap dough around caramel candies to form balls, then roll in cinnamon-sugar mixture.
- Place on baking sheet and bake for 10-12 minutes.
Notes
Make sure caramels are fully wrapped to prevent leaking.
