Easy no-bake holiday cookies made with Ritz crackers and caramel, perfect for Christmas treats.
Ingredients

- 1 sleeve of Ritz crackers
- 1 cup of granulated sugar
- 1/2 cup of unsalted butter
- 1/2 cup of brown sugar
- 1 teaspoon of vanilla extract
- 1 cup of chocolate chips for topping
Instructions
- Line a baking sheet with parchment paper and arrange the Ritz crackers in a single layer.
- In a saucepan, combine granulated sugar, brown sugar, and butter. Bring to a boil over medium heat, stirring constantly.
- Once boiling, let it cook for 2-3 minutes without stirring.
- Remove from heat and stir in vanilla extract.
- Pour the caramel mixture evenly over the crackers.
- Bake at 350°F for 5-7 minutes or until bubbly.
- Remove from oven, sprinkle chocolate chips on top, and let them melt.
- Spread the melted chocolate evenly and let cool completely before breaking into pieces.
Notes
Store in an airtight container for up to a week. These cookies are great for gifting during the holidays.
