Description

A delicious dessert combining the flavors of carrot cake and creamy cheesecake in easy-to-make bars.


Ingredients

  • 2 cups grated carrots
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract for frosting

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the grated carrots until evenly distributed.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the bars are cooling, prepare the cheesecake layer by beating the cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Spread the cheesecake mixture over the cooled bars and refrigerate for at least 1 hour before cutting into bars.

Notes

These bars can be stored in an airtight container in the refrigerator for up to 5 days.
