- 1 pound ground beef
- 4 cups potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat until no longer pink; drain excess fat.
- Add the chopped onion and garlic to the pot and cook until softened, about 5 minutes.
- Stir in the diced potatoes and beef broth; bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Stir in the milk and shredded cheese until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste. Serve hot.
Notes
For a thicker soup, mash some of the potatoes before adding the cheese.
