Description

A hearty and comforting soup featuring beef, potatoes, and melted cheese.


Ingredients

  • 1 pound ground beef
  • 4 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat until no longer pink; drain excess fat.
  2. Add the chopped onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in the diced potatoes and beef broth; bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. Stir in the milk and shredded cheese until the cheese is melted and the soup is creamy.
  5. Season with salt and pepper to taste. Serve hot.

Notes

For a thicker soup, mash some of the potatoes before adding the cheese.
