Description

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups potatoes, diced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic; sautΓ© until softened.
  3. Add potatoes and broccoli; cook for 5 minutes.
  4. Pour in vegetable broth; bring to a boil and simmer until vegetables are tender.
  5. Stir in cheddar cheese and milk; blend until smooth.
  6. Season with salt and pepper; serve hot.

Notes

For a creamier soup, use an immersion blender. Add more cheese if desired.
