- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups potatoes, diced
- 4 cups broccoli florets
- 4 cups vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sautΓ© until softened.
- Add potatoes and broccoli; cook for 5 minutes.
- Pour in vegetable broth; bring to a boil and simmer until vegetables are tender.
- Stir in cheddar cheese and milk; blend until smooth.
- Season with salt and pepper; serve hot.
Notes
For a creamier soup, use an immersion blender. Add more cheese if desired.
