Description
Grilled chicken skewers coated in melted cheese, served with crispy fries and a refreshing chopped salad.
Ingredients

- 2 lbs chicken breast, cut into 1-inch cubes
- 1 cup shredded cheddar cheese
- 1/2 cup olive oil
- 2 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 4 large potatoes, cut into fries
- 2 tbsp vegetable oil for frying
- 1 head romaine lettuce, chopped
- 1 cucumber, diced
- 1 tomato, diced
- 1/4 red onion, sliced
Instructions
- In a bowl, mix chicken cubes with olive oil, garlic powder, paprika, salt, and pepper. Marinate for 15 minutes.
- Preheat grill to medium-high heat. Thread chicken onto skewers.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through. In the last 2 minutes, sprinkle cheese over the skewers and let it melt.
- Meanwhile, heat vegetable oil in a deep fryer or pan to 375ยฐF. Fry potato strips for 5-7 minutes until golden and crispy. Drain on paper towels.
- In a large bowl, combine chopped lettuce, cucumber, tomato, and red onion. Toss with your favorite dressing.
- Serve the cheesy chicken skewers with a side of fries and the chopped salad.
Notes
For a spicier version, add chili flakes to the marinade. Ensure chicken reaches an internal temperature of 165ยฐF.
