Cheesy Chicken Skewers with Fries & Chopped Salad

Description

Grilled chicken skewers coated in melted cheese, served with crispy fries and a refreshing chopped salad.


Ingredients

  • 2 lbs chicken breast, cut into 1-inch cubes
  • 1 cup shredded cheddar cheese
  • 1/2 cup olive oil
  • 2 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 large potatoes, cut into fries
  • 2 tbsp vegetable oil for frying
  • 1 head romaine lettuce, chopped
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/4 red onion, sliced

Instructions

  1. In a bowl, mix chicken cubes with olive oil, garlic powder, paprika, salt, and pepper. Marinate for 15 minutes.
  2. Preheat grill to medium-high heat. Thread chicken onto skewers.
  3. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through. In the last 2 minutes, sprinkle cheese over the skewers and let it melt.
  4. Meanwhile, heat vegetable oil in a deep fryer or pan to 375ยฐF. Fry potato strips for 5-7 minutes until golden and crispy. Drain on paper towels.
  5. In a large bowl, combine chopped lettuce, cucumber, tomato, and red onion. Toss with your favorite dressing.
  6. Serve the cheesy chicken skewers with a side of fries and the chopped salad.

Notes

For a spicier version, add chili flakes to the marinade. Ensure chicken reaches an internal temperature of 165ยฐF.
