Description

These creamy, cheesy Funeral Potatoes are great for breakfast or as a side dish at dinner. They’re always a crowd-pleaser!


Ingredients

  • 1 (32 ounce) package frozen hash browns, thawed
  • 2 (10.75 ounce) cans condensed cream of chicken soup, undiluted
  • 3 cups sour cream
  • 1 cup shredded Cheddar cheese
  • 1/2 cup butter, melted, divided
  • 1 small onion, chopped
  • 3 cups cornflakes cereal, crushed
  • 1/2 cup butter, melted

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
  2. Combine potatoes, soup, sour cream, cheese, butter, and onion in a large bowl. Mix well and pour into prepared baking dish.
  3. Bake in the preheated oven for 45 minutes.
  4. Mix cornflakes and remaining melted butter in a bowl. Sprinkle over casserole and bake for another 30 minutes.

Notes

Additional ingredients may build up in the bowls between the baked casserole and the topping. Fortunately, they get some good flavor too! A quick rinse and they’re ready to use again.
