- 2 pounds russet potatoes, diced
- 1 pound smoked sausage, sliced
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400Β°F (200Β°C).
- In a large bowl, toss the diced potatoes with olive oil, ranch seasoning, salt, and pepper until evenly coated.
- Spread the potatoes on a baking sheet and bake for 25-30 minutes, or until golden and tender.
- While the potatoes are baking, cook the sliced smoked sausage in a skillet over medium heat until browned, about 5-7 minutes.
- Remove potatoes from the oven and mix in the cooked sausage and shredded cheddar cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted.
- Serve hot, topped with a dollop of sour cream.
Notes
For a spicier version, add diced jalapenos or hot sauce to the mix. Leftovers can be refrigerated for up to 3 days.
