Ingredients

  • 1 package (about 20 oz) fresh or frozen cheesy ravioli
  • 2 cups fresh spinach, washed and chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions, usually 4-6 minutes, until they float to the top. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sautΓ© for 1 minute until fragrant.
  3. Add the sliced mushrooms and sun-dried tomatoes to the skillet. Cook for 3-4 minutes, stirring occasionally, until the mushrooms are softened.
  4. Stir in the chopped spinach and cook for another 2 minutes until wilted. Season with salt and pepper to taste.
  5. Add the cooked ravioli to the skillet and toss everything together gently to combine.
  6. Sprinkle with grated Parmesan cheese and serve immediately.
