- 1 package (about 20 oz) fresh or frozen cheesy ravioli
- 2 cups fresh spinach, washed and chopped
- 1 cup mushrooms, sliced
- 1/2 cup sun-dried tomatoes, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions, usually 4-6 minutes, until they float to the top. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sautΓ© for 1 minute until fragrant.
- Add the sliced mushrooms and sun-dried tomatoes to the skillet. Cook for 3-4 minutes, stirring occasionally, until the mushrooms are softened.
- Stir in the chopped spinach and cook for another 2 minutes until wilted. Season with salt and pepper to taste.
- Add the cooked ravioli to the skillet and toss everything together gently to combine.
- Sprinkle with grated Parmesan cheese and serve immediately.
