Cheesy Stuffed Meatloaf Bites

Description

A fun and flavorful twist on classic meatloaf. These individual-sized bites are stuffed with a gooey, melted cheese center, making them a perfect appetizer or main course.

For the Crust:

  • 1 lb ground beef (85/15)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg, beaten
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 oz block of mozzarella cheese, cut into 12 small cubes
  • 1/2 cup ketchup

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently with your hands until just combined; do not overmix.
  3. Divide the meat mixture into 12 equal portions. Flatten a portion in your hand, place a cheese cube in the center, and shape the meat around the cheese to completely enclose it, forming a ball.
  4. Place each stuffed meatball into a prepared muffin cup. Spread a small amount of ketchup over the top of each one.
  5. Bake for 25-30 minutes, or until the meat is cooked through and the tops are lightly browned. Let rest in the pan for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
