A fun and flavorful twist on classic meatloaf. These individual-sized bites are stuffed with a gooey, melted cheese center, making them a perfect appetizer or main course.

For the Crust:
- 1 lb ground beef (85/15)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg, beaten
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 oz block of mozzarella cheese, cut into 12 small cubes
- 1/2 cup ketchup
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
- In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently with your hands until just combined; do not overmix.
- Divide the meat mixture into 12 equal portions. Flatten a portion in your hand, place a cheese cube in the center, and shape the meat around the cheese to completely enclose it, forming a ball.
- Place each stuffed meatball into a prepared muffin cup. Spread a small amount of ketchup over the top of each one.
- Bake for 25-30 minutes, or until the meat is cooked through and the tops are lightly browned. Let rest in the pan for 5 minutes before serving.
