A one-pan wonder that combines the flavors of tacos with cheesy rice for an easy, delicious dinner.

- 1 pound ground beef
- 1 taco seasoning packet
- 1 cup uncooked rice
- 2 cups beef broth
- 1 can black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Optional toppings: avocado, tomatoes, cilantro
Instructions
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Stir in taco seasoning, rice, and beef broth. Bring to a boil.
- Reduce heat, cover, and simmer for 18-20 minutes until rice is tender.
- Stir in black beans and cheese until melted.
- Top with sour cream and serve.
Notes
Feel free to add more veggies or adjust the cheese amount for preference.
