Description

A one-pan wonder that combines the flavors of tacos with cheesy rice for an easy, delicious dinner.


Ingredients

  • 1 pound ground beef
  • 1 taco seasoning packet
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Optional toppings: avocado, tomatoes, cilantro

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  2. Stir in taco seasoning, rice, and beef broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 18-20 minutes until rice is tender.
  4. Stir in black beans and cheese until melted.
  5. Top with sour cream and serve.

Notes

Feel free to add more veggies or adjust the cheese amount for preference.
