Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch cake pan.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in the chopped cherries.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, alternating with buttermilk.
- Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
- For frosting: Beat cream cheese until smooth, then add powdered sugar and cherry juice. Spread over cooled cake.
