For the Crust:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus more for rolling
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup finely chopped pistachios
- 1/2 cup dried cherries, finely chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy. Beat in the vanilla extract.
- In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the chopped pistachios and dried cherries.
- Shape the dough into 1-inch balls and place them 1 inch apart on the prepared baking sheet.
- Bake for 12-15 minutes, or until the bottoms are just lightly golden. Let the cookies cool on the baking sheet for 5 minutes.
- While still warm, carefully roll the cookies in powdered sugar until heavily coated. Let cool completely on a wire rack, then roll in powdered sugar a second time.
