These Peanut Butter Cup Cookies are a delightful treat combining creamy peanut butter with chocolate cups, perfect for any dessert lover.


Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 24 miniature chocolate peanut butter cups, unwrapped

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, cream together the peanut butter, butter, white sugar, and brown sugar until smooth.
  3. Beat in the egg until well blended.
  4. In a separate bowl, combine the flour, baking soda, baking powder, and salt; stir into the peanut butter mixture.
  5. Roll dough into 1 inch balls and place them into muffin tins.
  6. Bake for about 8 minutes in the preheated oven. Press a peanut butter cup into each cookie immediately after removing from the oven.
  7. Allow cookies to cool in the pan for 10 minutes before removing to a wire rack to cool completely.

Notes

Make sure to use fresh peanut butter for the best texture. Store cookies in an airtight container for up to 5 days.
