- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 24 miniature chocolate peanut butter cups, unwrapped
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the peanut butter, butter, white sugar, and brown sugar until smooth.
- Beat in the egg until well blended.
- In a separate bowl, combine the flour, baking soda, baking powder, and salt; stir into the peanut butter mixture.
- Roll dough into 1 inch balls and place them into muffin tins.
- Bake for about 8 minutes in the preheated oven. Press a peanut butter cup into each cookie immediately after removing from the oven.
- Allow cookies to cool in the pan for 10 minutes before removing to a wire rack to cool completely.
Notes
Make sure to use fresh peanut butter for the best texture. Store cookies in an airtight container for up to 5 days.
