Ingredients

- 2 chicken breasts, boneless and skinless
- 1 cup pearl barley
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 2 garlic cloves, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat oil over medium heat and sautΓ© onion, carrots, celery, and garlic until softened.
- Add chicken breasts and cook until browned on all sides.
- Stir in barley, chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes or until barley is tender and chicken is cooked through.
- Remove chicken, shred it, and return to the pot.
- Serve hot.
Notes
For a vegetarian version, substitute chicken with mushrooms and use vegetable broth.
