Description

A comforting soup made with tender chicken, barley, vegetables, and herbs, perfect for a hearty meal.


Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup pearl barley
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 2 garlic cloves, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat oil over medium heat and sautΓ© onion, carrots, celery, and garlic until softened.
  2. Add chicken breasts and cook until browned on all sides.
  3. Stir in barley, chicken broth, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes or until barley is tender and chicken is cooked through.
  5. Remove chicken, shred it, and return to the pot.
  6. Serve hot.

Notes

For a vegetarian version, substitute chicken with mushrooms and use vegetable broth.
