Description

Tender chicken carnitas made easily in a slow cooker or Instant Pot, perfect for tacos or burritos with flavorful spices and juices.


Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Juice of 2 oranges
  • Juice of 2 limes
  • 1 cup chicken broth

Instructions

  1. Place chicken thighs in the slow cooker or Instant Pot.
  2. Add diced onion, minced garlic, chili powder, cumin, oregano, salt, and black pepper.
  3. Pour in orange juice, lime juice, and chicken broth.
  4. For slow cooker: Cook on low for 6-8 hours. For Instant Pot: Cook on high pressure for 20 minutes, then natural release.
  5. Shred the chicken using two forks and mix with the juices.

Notes

Serve with tortillas, cilantro, and avocado for best results.
