Tender chicken carnitas made easily in a slow cooker or Instant Pot, perfect for tacos or burritos with flavorful spices and juices.
Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 1 onion, diced
- 4 garlic cloves, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- Juice of 2 oranges
- Juice of 2 limes
- 1 cup chicken broth
Instructions
- Place chicken thighs in the slow cooker or Instant Pot.
- Add diced onion, minced garlic, chili powder, cumin, oregano, salt, and black pepper.
- Pour in orange juice, lime juice, and chicken broth.
- For slow cooker: Cook on low for 6-8 hours. For Instant Pot: Cook on high pressure for 20 minutes, then natural release.
- Shred the chicken using two forks and mix with the juices.
Notes
Serve with tortillas, cilantro, and avocado for best results.
