Description

A creamy, spicy, and incredibly cheesy pasta dish featuring tender chicken and penne pasta smothered in a rich Mozzarella and Velveeta cheese sauce with a kick of Cajun seasoning and garlic.

For the Crust:

  • 1 lb penne pasta
  • 2 boneless, skinless chicken breasts, cubed
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 8 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Crust:

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente. Drain and set aside.
  2. While the pasta cooks, season the cubed chicken with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Reduce the heat to medium-low. Pour in the heavy cream and chicken broth, stirring to combine. Add the cubed Velveeta and stir continuously until the cheese is completely melted and the sauce is smooth.
  4. Add the cooked penne pasta and shredded mozzarella cheese to the skillet. Stir until the mozzarella is melted and the pasta is evenly coated in the sauce. Garnish with fresh parsley and serve immediately.
