Ingredients

  • 1 pound ground chicken
  • 1 cup ricotta cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup butter
  • 1 cup grated Parmesan cheese for sauce
  • 4 slices bacon, cooked and crumbled

Instructions

  1. In a large bowl, combine ground chicken, ricotta cheese, breadcrumbs, 1/4 cup Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat a skillet over medium heat and cook the meatballs until browned and cooked through, about 10-15 minutes.
  4. In a separate saucepan, melt butter over medium heat. Add fresh spinach and cook until wilted.
  5. Stir in heavy cream and 1 cup grated Parmesan cheese, simmering until the sauce thickens.
  6. Pour the spinach Alfredo sauce over the meatballs and top with crumbled bacon.
  7. Serve hot and enjoy.

Notes

For a lighter version, use turkey instead of chicken and low-fat ricotta.
