Description

Tender chicken meatballs made with ricotta cheese for a moist and flavorful twist, perfect for pasta or appetizers.


Ingredients

  • 1 pound ground chicken
  • 1 cup ricotta cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Instructions

  1. In a large bowl, combine ground chicken, ricotta cheese, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, pepper, and oregano.
  2. Mix until just combined, being careful not to overwork the meat.
  3. Form the mixture into 1-inch meatballs.
  4. Preheat oven to 375Β°F (190Β°C).
  5. Place meatballs on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, or until cooked through and golden brown.
  7. Serve hot with your favorite sauce.

Notes

For a lighter version, use low-fat ricotta. These meatballs can be frozen for up to 3 months.
