Ingredients

  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • 2 cups rice, cooked
  • 1 cup cucumber, sliced
  • 1 cup tomatoes, diced
  • 1/2 cup red onion, thinly sliced
  • Fresh parsley for garnish

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, garlic, cumin, paprika, turmeric, coriander, salt, and pepper. Add chicken and marinate for at least 1 hour.
  2. Cook the chicken: Grill or pan-fry the chicken until fully cooked, about 6-8 minutes per side.
  3. Prepare the bowl: In a bowl, layer cooked rice, sliced chicken, cucumber, tomatoes, and red onion.
  4. Garnish and serve: Top with fresh parsley and any desired sauces.
