Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 2 tsp paprika
- 1 tsp turmeric
- 1 tsp ground coriander
- Salt and pepper to taste
- 2 cups rice, cooked
- 1 cup cucumber, sliced
- 1 cup tomatoes, diced
- 1/2 cup red onion, thinly sliced
- Fresh parsley for garnish
Instructions
- Marinate the chicken: In a bowl, mix olive oil, garlic, cumin, paprika, turmeric, coriander, salt, and pepper. Add chicken and marinate for at least 1 hour.
- Cook the chicken: Grill or pan-fry the chicken until fully cooked, about 6-8 minutes per side.
- Prepare the bowl: In a bowl, layer cooked rice, sliced chicken, cucumber, tomatoes, and red onion.
- Garnish and serve: Top with fresh parsley and any desired sauces.
Notes
For a vegetarian option, substitute chicken with chickpeas.
