Chicken Spaghetti with Burrata Lemon Butter Garlic Sauce

A creamy and luxurious pasta dish featuring tender chicken and spaghetti tossed in a rich, velvety sauce of melted burrata, butter, fresh lemon, and garlic.

For the Crust:

  • 1 lb spaghetti
  • 2 boneless, skinless chicken breasts, cubed
  • 8 oz burrata cheese
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. Bring a large pot of salted water to a boil and cook spaghetti according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While pasta cooks, season chicken cubes with salt and pepper. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Cook chicken until golden brown and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, reduce heat to medium and melt the remaining butter. Add the minced garlic and cook for 1 minute until fragrant. Add the lemon zest and juice, and stir to combine.
  4. Add the drained spaghetti and cooked chicken to the skillet. Toss to coat in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
  5. Remove the skillet from the heat. Tear the burrata into pieces and gently fold it into the pasta until it begins to melt and create a creamy sauce. Garnish with fresh parsley and red pepper flakes if desired. Serve immediately.

Notes

You can customize the seasonings to taste.
