- 1 pound boneless, skinless chicken thighs
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 8 small corn tortillas
- 1/2 cup diced white onion
- 1/2 cup chopped fresh cilantro
- 1 lime, cut into wedges
- Optional toppings: salsa, avocado slices
Instructions
- In a bowl, mix chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
- Toss the chicken thighs in the spice mixture until evenly coated.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for 6-8 minutes per side, or until fully cooked and golden brown.
- Remove chicken from skillet and let rest for 5 minutes, then shred using two forks.
- Warm the corn tortillas in a dry skillet or microwave for 30 seconds.
- Assemble the tacos by filling each tortilla with shredded chicken, diced onion, and cilantro.
- Serve immediately with lime wedges and optional toppings.
Notes
For a spicier version, add jalapeño slices or hot sauce. Make sure to use fresh ingredients for the best flavor.
