- 1 pound boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup diced onion
- 1 cup chopped cilantro
- Lime wedges for serving
Instructions
- In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Add chicken thighs to the marinade and let sit for 15 minutes.
- Grill the chicken over medium heat for 6-8 minutes per side until cooked through.
- Let the chicken rest, then slice into thin strips.
- Warm the tortillas on a skillet.
- Assemble tacos by placing chicken in tortillas and topping with onion, cilantro, and a squeeze of lime.
Notes
For a spicier version, add jalapenos to the toppings. Serve immediately for best flavor.
