Ingredients

  • 2 pounds boneless chicken thighs, cut into pieces
  • 3 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 potatoes, cubed
  • 1 cup green beans
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sautΓ© until fragrant, about 2 minutes.
  3. Add chicken pieces and cook until browned on all sides.
  4. Stir in carrots, celery, potatoes, and green beans.
  5. Pour in chicken broth and add salt, pepper, and thyme.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes until vegetables are tender.

Notes

For a thicker stew, add a slurry of flour and water in the last 10 minutes of cooking.
