- 2 pounds boneless chicken thighs, cut into pieces
- 3 medium carrots, sliced
- 2 celery stalks, chopped
- 1 large onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 potatoes, cubed
- 1 cup green beans
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sautΓ© until fragrant, about 2 minutes.
- Add chicken pieces and cook until browned on all sides.
- Stir in carrots, celery, potatoes, and green beans.
- Pour in chicken broth and add salt, pepper, and thyme.

Notes
For a thicker stew, add a slurry of flour and water in the last 10 minutes of cooking.
