Ingredients

  • 2 lbs boneless chicken thighs
  • 2 tablespoons chipotle paste
  • Juice of 2 limes
  • 1 teaspoon garlic powder
  • 1 cup corn kernels
  • 1 bell pepper, sliced
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, mix chipotle paste, lime juice, garlic powder, and salt.
  2. Marinate the chicken in the mixture for at least 30 minutes.
  3. Heat olive oil in a grill pan over medium heat.
  4. Grill the chicken for 6-8 minutes per side until cooked through.
  5. In a separate pan, sautΓ© corn and bell peppers for 5 minutes.
  6. Serve the grilled chicken with the corn and peppers on the side.

Notes

For a spicier version, add extra chipotle paste. Ensure chicken reaches an internal temperature of 165Β°F.
