Description

A vibrant and spicy bowl featuring grilled shrimp marinated in chipotle and lime, served with fresh vegetables and rice.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 chipotle peppers in adobo sauce, chopped
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, whisk together olive oil, chipotle peppers, lime juice, garlic, cumin, salt, and pepper.
  2. Add the shrimp to the marinade and toss to coat. Let it sit for 15 minutes.
  3. Heat a grill or skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and opaque.
  4. Assemble the bowls by layering cooked brown rice, grilled shrimp, avocado slices, cherry tomatoes, and red onion.
  5. Garnish with fresh cilantro and an extra squeeze of lime if desired.
  6. Serve immediately.

Notes

For a spicier version, add more chipotle peppers. This recipe pairs well with a side of tortilla chips.
