- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 chipotle peppers in adobo sauce, chopped
- Juice of 2 limes
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 cups cooked brown rice
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- Fresh cilantro for garnish
Instructions
- In a bowl, whisk together olive oil, chipotle peppers, lime juice, garlic, cumin, salt, and pepper.
- Add the shrimp to the marinade and toss to coat. Let it sit for 15 minutes.
- Heat a grill or skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and opaque.
- Assemble the bowls by layering cooked brown rice, grilled shrimp, avocado slices, cherry tomatoes, and red onion.
- Garnish with fresh cilantro and an extra squeeze of lime if desired.
- Serve immediately.
Notes
For a spicier version, add more chipotle peppers. This recipe pairs well with a side of tortilla chips.
