- 2 tbsp chipotle adobo sauce
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- 4 large flour tortillas
- 2 cups shredded Monterey Jack cheese
- 1/2 cup diced bell peppers
- 1/2 cup sliced onions
- 2 tbsp olive oil for cooking
Instructions
- Marinate the flank steak with chipotle adobo sauce, cumin, garlic powder, salt, and pepper for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat.
- Cook the steak for 4-5 minutes per side until medium-rare, then let it rest and slice thinly.
- Assemble the quesadilla by placing sliced steak, shredded cheese, diced bell peppers, and sliced onions on one half of each tortilla.
- Fold the tortilla in half and cook in the skillet for 2-3 minutes per side until golden and cheese is melted.
- Remove from heat, cut into wedges, and serve immediately.
Notes
For a milder version, reduce the chipotle sauce; pair with guacamole for extra flavor.
