Chocolate Cake with Strawberries

Description

This decadent chocolate cake is layered with fresh strawberries and topped with whipped cream.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, stir together the flour, sugar, cocoa, baking powder, baking soda and salt.
  3. Add the eggs, milk, oil and vanilla; mix for 2 minutes on medium speed.
  4. Stir in the boiling water. The batter will be thin. Pour evenly into the prepared pans.
  5. Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted comes out clean.
  6. Cool in pans for 10 minutes, then remove to wire racks to cool completely.
  7. Once cool, layer with sliced strawberries and frost as desired.

Notes

For a richer flavor, use dark chocolate cocoa.
