- 1/2 cup unsalted butter, softened
- 1/2 cup fresh strawberries, chopped
- 1 cup semisweet chocolate chips
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 egg
Instructions
- Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually stir in the flour and salt until a dough forms.
- Gently fold in the chopped strawberries.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are golden.
- Allow cookies to cool completely on a wire rack.
- Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds.
- Dip each cooled cookie halfway into the melted chocolate and place on parchment paper to set.
Notes
For best results, use ripe strawberries and store cookies in an airtight container. These can be refrigerated for up to 5 days.
