  • 1/4 cup cold water
  • Graham cracker crumbs for base

Instructions

  1. Prepare the chocolate mousse: Melt the chopped dark chocolate in a double boiler, then let it cool slightly.
  2. In a separate bowl, whip the heavy whipping cream until soft peaks form, then fold in the melted chocolate.
  3. For the strawberry layer: Puree the fresh strawberries in a blender and set aside.
  4. Make the cheesecake filling: Beat the cream cheese, granulated sugar, and vanilla extract until smooth.
  5. Bloom the gelatin in cold water, then mix it into the cheesecake filling.
  6. Assemble the towers: Layer graham cracker crumbs at the base, followed by chocolate mousse, strawberry puree, and cheesecake filling in individual molds.
  7. Refrigerate for at least 2 hours until set.
  8. Unmold and serve chilled.
