Instructions
- Prepare the chocolate mousse: Melt the chopped dark chocolate in a double boiler, then let it cool slightly.
- In a separate bowl, whip the heavy whipping cream until soft peaks form, then fold in the melted chocolate.
- For the strawberry layer: Puree the fresh strawberries in a blender and set aside.
- Make the cheesecake filling: Beat the cream cheese, granulated sugar, and vanilla extract until smooth.
- Bloom the gelatin in cold water, then mix it into the cheesecake filling.
- Assemble the towers: Layer graham cracker crumbs at the base, followed by chocolate mousse, strawberry puree, and cheesecake filling in individual molds.
- Refrigerate for at least 2 hours until set.
- Unmold and serve chilled.
