Description

A classic holiday dessert featuring a rolled chocolate sponge cake filled with creamy frosting, decorated to resemble a yule log.


Ingredients

  • For the cake:
  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the filling:
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. In a bowl, beat egg yolks with sugar until thick and pale. Sift in flour, cocoa, baking powder, and salt; fold gently.
  3. In another bowl, beat egg whites until stiff peaks form. Fold into yolk mixture.
  4. Spread batter evenly in the prepared pan. Bake for 12-15 minutes or until done.
  5. While warm, invert cake onto a towel dusted with powdered sugar. Roll up and cool.
  6. For filling: Whip cream, powdered sugar, and vanilla until stiff.
  7. Unroll cake, spread filling, and re-roll. Frost and decorate as desired.

Notes

Ensure the cake is rolled while warm for the best shape. Store in the refrigerator for up to 3 days.
