Ingredients

  • 1 cup ricotta cheese
  • 2 tablespoons chia seeds
  • 1/2 cup almond milk
  • 1 tablespoon honey
  • 1/4 teaspoon vanilla extract
  • Optional: pomegranate seeds, crushed nuts for topping

Instructions

  1. In a bowl, combine chia seeds and almond milk; stir well and let it sit for 5 minutes to thicken.
  2. Add ricotta cheese, honey, and vanilla extract to the mixture; whisk until smooth and creamy.
  3. Divide the mixture into serving glasses or bowls.
  4. Cover and refrigerate for at least 2 hours or overnight to allow the chia seeds to fully absorb the liquid.
  5. Before serving, top with pomegranate seeds and crushed nuts for a festive touch.

Notes

For a vegan version, substitute ricotta with coconut yogurt. Store in the fridge for up to 3 days.
