A quick and flavorful meal featuring grilled chicken marinated in cilantro and lime, served with fresh peach salsa.

- 2 boneless, skinless chicken breasts
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 teaspoon olive oil
- Salt and pepper to taste
- 2 ripe peaches, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and minced
- 1 tablespoon fresh mint, chopped
- 2 cups cooked rice
- 1 avocado, sliced
Instructions
- In a bowl, combine cilantro, lime juice, olive oil, salt, and pepper. Add chicken breasts and marinate for 10 minutes.
- Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side until cooked through.
- In another bowl, mix diced peaches, red onion, jalapeno, and mint to make the salsa.
- Slice the grilled chicken and assemble bowls with rice, chicken, peach salsa, and sliced avocado.
- Serve immediately.
Notes
For a spicier version, leave the seeds in the jalapeno. This recipe is best served fresh.
