Description

A quick and flavorful meal featuring grilled chicken marinated in cilantro and lime, served with fresh peach salsa.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 2 ripe peaches, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno, seeded and minced
  • 1 tablespoon fresh mint, chopped
  • 2 cups cooked rice
  • 1 avocado, sliced

Instructions

  1. In a bowl, combine cilantro, lime juice, olive oil, salt, and pepper. Add chicken breasts and marinate for 10 minutes.
  2. Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side until cooked through.
  3. In another bowl, mix diced peaches, red onion, jalapeno, and mint to make the salsa.
  4. Slice the grilled chicken and assemble bowls with rice, chicken, peach salsa, and sliced avocado.
  5. Serve immediately.

Notes

For a spicier version, leave the seeds in the jalapeno. This recipe is best served fresh.
