Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced

Instructions

  1. In a bowl, combine cilantro, lime juice, olive oil, salt, and pepper to make the marinade.
  2. Add chicken breasts to the marinade and let sit for 15-20 minutes.
  3. Grill the chicken over medium heat for 6-7 minutes per side, or until fully cooked.
  4. Let the chicken rest for 5 minutes, then slice it.
  5. In a large salad bowl, combine mixed greens, avocado, cherry tomatoes, and red onion.
  6. Top the salad with the sliced chicken.
  7. Drizzle with additional lime juice if desired and serve immediately.

Notes

For a spicier version, add jalapeΓ±o slices to the salad.
