For the Crust:
- 1 (8 oz) package cream cheese, softened
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened cream cheese, butter, and 1 1/2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, mix the 1/4 cup sugar and cinnamon. Drop tablespoon-sized balls of dough into the cinnamon-sugar mixture and roll to coat. Place cookies 2 inches apart on the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
