Soft, cake-like cookies with a rich cream cheese base and a warm, sweet cinnamon swirl.

For the Crust:

  • 1 (8 oz) package cream cheese, softened
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened cream cheese, butter, and 1 1/2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  3. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. In a small bowl, mix the 1/4 cup sugar and cinnamon. Drop tablespoon-sized balls of dough into the cinnamon-sugar mixture and roll to coat. Place cookies 2 inches apart on the prepared baking sheets.
  5. Bake for 10-12 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
