Instructions
- Preheat oven to 325Β°F (163Β°C). Grease a 9-inch springform pan.
- Mix graham cracker crumbs and melted butter; press into the bottom of the pan to form the crust.
- In a large bowl, beat cream cheese and granulated sugar until smooth. Add vanilla and eggs one at a time, mixing well after each.
- Stir in sour cream, cinnamon, and honey until fully combined.
- Pour the batter over the crust and smooth the top.
- Bake for 60-70 minutes or until the center is set. Let cool completely.
- Sprinkle brown sugar and pecans on top before serving.
