- For the Muffins:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 ripe pears, peeled and diced
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- For the Streusel:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold and cubed
Instructions
- Preheat your oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix the diced pears with 1/4 cup of sugar and set aside.
- In a separate bowl, beat the melted butter, remaining sugar, eggs, vanilla, and milk until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just mixed. Fold in the pear mixture.
- For the streusel, combine flour, sugars, and cinnamon in a bowl. Cut in the cold butter until crumbly.
- Spoon the muffin batter into the prepared tin, then top with streusel.
- Bake for 18-22 minutes or until a toothpick inserted comes out clean. Cool on a wire rack.
Notes
Store in an airtight container for up to 3 days. These muffins are best enjoyed warm with a cup of coffee.
