Description

These muffins feature juicy pears topped with a crispy cinnamon streusel, perfect for a cozy breakfast or snack.


Ingredients

  • For the Muffins:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 ripe pears, peeled and diced
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • For the Streusel:
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the diced pears with 1/4 cup of sugar and set aside.
  4. In a separate bowl, beat the melted butter, remaining sugar, eggs, vanilla, and milk until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just mixed. Fold in the pear mixture.
  6. For the streusel, combine flour, sugars, and cinnamon in a bowl. Cut in the cold butter until crumbly.
  7. Spoon the muffin batter into the prepared tin, then top with streusel.
  8. Bake for 18-22 minutes or until a toothpick inserted comes out clean. Cool on a wire rack.

Notes

Store in an airtight container for up to 3 days. These muffins are best enjoyed warm with a cup of coffee.
