Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar, divided
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1/2 cup granulated sugar mixed with 1 teaspoon cinnamon for rolling

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Beat in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop out tablespoon-sized portions of dough and roll into balls.
  7. Roll each ball in the cinnamon-sugar mixture.
  8. Place on the prepared baking sheet, about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden.
  10. Cool on the baking sheet for 5 minutes, then roll the warm cookies in the remaining powdered sugar.
  11. Let cool completely before serving.

Notes

Store in an airtight container at room temperature for up to 5 days. For extra crunch, roll in more cinnamon-sugar after cooling.
