- 1 cup powdered sugar, divided
- 1 teaspoon vanilla extract

- 1/2 teaspoon cinnamon
- Pinch of salt
- 1/2 cup granulated sugar mixed with 1 teaspoon cinnamon for rolling
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
- Beat in the vanilla extract.
- In a separate bowl, whisk together the flour, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop out tablespoon-sized portions of dough and roll into balls.
- Roll each ball in the cinnamon-sugar mixture.
- Place on the prepared baking sheet, about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Cool on the baking sheet for 5 minutes, then roll the warm cookies in the remaining powdered sugar.
- Let cool completely before serving.
Notes
Store in an airtight container at room temperature for up to 5 days. For extra crunch, roll in more cinnamon-sugar after cooling.
