- 1 pound large shrimp, peeled and deveined
- 1 can (14 ounces) coconut milk
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 teaspoon chili flakes
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic, sautΓ© until softened.
- Add red bell pepper and chili flakes, cook for 2 minutes.
- Stir in curry powder and cook for 1 minute.
- Pour in coconut milk and bring to a simmer.
- Add shrimp and cook until they turn pink, about 5 minutes.
- Season with salt and garnish with fresh cilantro.
- Serve hot with rice.
Notes
For a milder version, reduce the chili flakes. Pairs well with naan bread.
