Description

A quick and flavorful stir-fry featuring shrimp cooked in a creamy coconut and zesty lime sauce, perfect for a weeknight dinner.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the garlic and ginger, and stir-fry for 1 minute until fragrant.
  3. Add the shrimp and cook for 2-3 minutes until they start to turn pink.
  4. Stir in the sliced onion and bell pepper, and cook for another 2 minutes.
  5. Pour in the coconut milk and soy sauce, and bring to a simmer.
  6. Add the lime juice, salt, and pepper, and cook for 3-4 minutes until the sauce thickens slightly.
  7. Garnish with fresh cilantro and serve hot.

Notes

For a spicier version, add red pepper flakes or chopped chili peppers. Pair with steamed rice for a complete meal.
