Coconut Pecan Stupid Pie

An impossibly easy, no-fuss pie with a rich, gooey coconut and pecan filling that forms its own crust as it bakes.

For the Crust:

  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie plate.
  2. In a large bowl, whisk together the sugar and flour. Stir in the beaten eggs and melted butter until the mixture is smooth.
  3. Fold in the shredded coconut, chopped pecans, vanilla extract, and salt until all ingredients are well combined.
  4. Pour the mixture into the prepared pie plate and spread it into an even layer.
  5. Bake for 30-35 minutes, or until the top is golden brown and the center is set. Let cool for at least 15 minutes before serving.
