Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon instant coffee granules
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the frosting: 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon instant coffee dissolved in 1 tablespoon hot water
  • 2 tablespoons milk
  • 1/4 cup softened butter

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease an 8×8 inch baking pan.
  2. In a large bowl, whisk together the flour, cocoa powder, instant coffee granules, baking powder, and salt.
  3. In another bowl, mix the melted butter and granulated sugar until well combined.
  4. Add the eggs and vanilla extract to the butter mixture, stirring until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the brownies to cool completely in the pan.
  9. For the frosting: In a bowl, beat the softened butter until creamy.
  10. Add the powdered sugar, cocoa powder, dissolved coffee, and milk, then beat until smooth and spreadable.
  11. Spread the frosting evenly over the cooled brownies.
  12. Cut into squares and serve.

Notes

These brownies are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days. For a stronger coffee flavor, increase the instant coffee to 2 tablespoons.
