  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup strong brewed coffee, cooled
  • 1 teaspoon baking powder

  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • For the buttercream:
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons strong brewed coffee, cooled
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract and cooled coffee.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cupcakes to cool completely on a wire rack.
  8. For the buttercream: In a large bowl, beat the butter until creamy, then gradually add powdered sugar, coffee, and vanilla extract, beating until smooth.
  9. Frost the cooled cupcakes with the coffee buttercream.
