Instructions
- Preheat your oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
- In a large bowl, beat the butter and cream cheese together until smooth and creamy.
- Add the sugar and beat until light and fluffy, then mix in the eggs and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Divide the dough in half; stir the dissolved coffee into one half and the cocoa powder into the other half.
- Drop alternating spoonfuls of the two dough mixtures onto the prepared baking sheets to create a marbled effect.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the sheets for 5 minutes before transferring to a wire rack.
Notes
For a stronger coffee flavor, increase the instant coffee to 3 tablespoons. Store cookies in an airtight container for up to 5 days.
