Ingredients

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons instant coffee granules dissolved in 1 tablespoon hot water
  • 1/2 cup unsweetened cocoa powder
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a large bowl, beat the butter and cream cheese together until smooth and creamy.
  4. Add the sugar and beat until light and fluffy, then mix in the eggs and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Divide the dough in half; stir the dissolved coffee into one half and the cocoa powder into the other half.
  7. Drop alternating spoonfuls of the two dough mixtures onto the prepared baking sheets to create a marbled effect.
  8. Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the sheets for 5 minutes before transferring to a wire rack.

Notes

For a stronger coffee flavor, increase the instant coffee to 3 tablespoons. Store cookies in an airtight container for up to 5 days.
