Description

A refreshing pasta salad featuring sweet corn, crispy bacon, and a creamy pesto dressing for a delightful summer meal.


Ingredients

  • 8 oz pasta
  • 1 cup corn kernels
  • 4 slices bacon, cooked and crumbled
  • 1 bell pepper, diced
  • 1/2 cup basil pesto
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a skillet, cook bacon until crispy; remove and crumble.
  3. In a large bowl, combine cooked pasta, corn, bell pepper, and bacon.
  4. In a separate bowl, mix pesto and cream to make the dressing.
  5. Pour dressing over the salad and toss to combine; season with salt and pepper.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For a vegetarian version, omit bacon and add grilled mushrooms.
