Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 cup green beans, trimmed
  • 1 zucchini, sliced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and add diced onion and minced garlic; sautΓ© until fragrant.
  2. Add sliced carrots, chopped celery, and green beans; cook for 5 minutes.
  3. Stir in the chicken breasts and pour in the chicken broth; bring to a boil.
  4. Reduce heat and simmer for 20 minutes, or until chicken is cooked through.
  5. Remove chicken, shred it, and return it to the pot.
  6. Add sliced zucchini, thyme, salt, and pepper; simmer for another 10 minutes.
  7. Serve hot and enjoy!

Notes

For a vegetarian version, substitute chicken with tofu and use vegetable broth.
