- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 1 cup green beans, trimmed
- 1 zucchini, sliced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat and add diced onion and minced garlic; sautΓ© until fragrant.
- Add sliced carrots, chopped celery, and green beans; cook for 5 minutes.
- Stir in the chicken breasts and pour in the chicken broth; bring to a boil.
- Reduce heat and simmer for 20 minutes, or until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot.
- Add sliced zucchini, thyme, salt, and pepper; simmer for another 10 minutes.
